Crock Pot Pulled Pork

I got it BAD!

That is, I’ve got a bad Crock Pot addiction. Does that make me a “Crock Addict” or just someone with a bad habit of punning?

Probably both :D

There is something about coming home to a meal already made that just can’t be beat. Since I can’t convince Mr. Homebody to cook EVERY night, I have to plan ahead and make sure the crock pot can deliver tasty results on Mr. Homebody’s night off.

What can be better than saucy pulled pork on a fresh bun? Actually the only thing that can make it better is when it is topped with some homemade coleslaw (but that is just my humble opinion).

Crock Pot Pulled Pork

2-3 lbs pork

1/8 cup white sugar

1 tsp salt

2 tsps chili powder

1 tsp garlic powder

1 tsp paprika

1 tsp cumin

1 tsp chili flakes

pinch of cayenne pepper

generous sprinkle of black pepper

1 tbsps olive oil

1/4 cup beer

Combine the sugar and seasonings in a small bowl.

Spread liberally over all sides of the pork roast, including the sides, or what Mr. Homebody refers to as the “bum”. I know, he’s a little weird.

Place in the crock pot and pour the beer and olive oil combo around the sides of the pork. Cook on low for 8 hours.

Shred the pork and add your favourite BBQ Sauce (my vote is for my own Zesty Peach BBQ Sauce and a healthy dose of habanero hot sauce) and mix well. Serve on the freshest bun you can find, with some coleslaw.

Since you slaved so hard on dinner, get someone else to pitch in to take care of the clean up, at least that is what I would do!
