Lemony “Cloud” Ricotta Pancakes

Ya Weekend! I’ve been waiting for you to come along ALL WEEK.

To celebrate the weekend, I decided to make one of our favourite breakfasts, Lemony “Cloud” Ricotta Pancakes (as they are known around here).

These are so light, fluffy and delicious you may not even realize at first that they are packed full of protein and will sneak up on your tummy quickly if you overload your plate (consider yourself warned!).

Lemon Ricotta Pancakes

(modified from Cooks.com)

3 eggs, separated

1 cup light ricotta cheese

1/2 cup flour

pinch of salt

1 tsp baking powder

2/3 cup milk

zest of one lemon

a bit of butter (for the frying pan)

fresh raspberries, maple syrup and yogurt to serve

In a medium bowl, combine the egg yolks, ricotta, and milk. Then add the baking powder, flour, salt and lemon zest, mixing well.


In a separate bowl beat the egg whites until stiff peaks form. Gently combine with remaining ingredients, and be careful not to over stir… the batter will not appear completely even and this is okay!

Quickly heat the frying pan with a bit of butter and scoop in the batter to the size of pancake you prefer. I tend to keep these on the smaller side so they remain as fluffy as possible.

Flip when bubbles form around the edges to cook the other side.

Swat away onlookers that insist on asking, “are they ready yet?” lol.

When the pancakes are ready they are lovely served with a wee bit of maple syrup, fresh raspberries and a dollop of yogurt on the side.

Uh huh…This is what weekends were meant for!

    I really love cheese pancakes. I make cottage cheese pancakes all the time, because it’s what my mom used to make, but lately I’ve been experimenting with ricotta. I’ll have to try these. :)
